Suya Popcorn Chicken

What to do with suya spice? That was the question. After all the sweat and grind trying to find the ingredients, I wasn’t really feeling a ‘suya kebab’, as I decided to call them. I’m also trying to stave off red meat. Except lamb, she says in her head. Clearly still a big struggle for me. So I hunted around the internet and found this fun recipe by Ajoke – Suya Popcorn Chicken. I have adapted Ajoke’s recipe a bit to bring out more of the crispy light texture we love from popcorn chicken. As I’ve mentioned in a previous post, the key to crispy chicken pieces, is not flour, or even the batter, its cornstarch. A little goes a long way (for more on the science of good fried chicken see here). So let me waste no more time, ladies and gentleman I present to you: Suya Popcorn Chicken!

Soft Spinach Tortilla

These tortillas are unbelievably soft and tasty. The bright green dough is what strikes you first before you rip it open and dip it in some cool hummus or filling of your choice. I love how these wraps turned out, a lot better than I expected. To re-heat them, I recommend you fold them and place it in the toaster for a 10-20 seconds if your feeling lazy like me, keeping a close eye on it of course, otherwise a minute or two in the oven. You won’t regret it…;-)

Chocolate Bark with Bite

  If you manage to make this sweet treat last a week, you did better than me. It’s unbelievably satisfying to eat and easy to make. Plus I think  it’s probably the healthiest chocolate bar(k) you’ll ever find, which makes it even harder to resist gobbling up?! So what gives this bark its ‘bite’? No it’s not the crunchy nuts or tangy cranberries trapped in the pool of chocolate like a welly caught in quick sand (terrible analogy). It is in fact ginger. You could add finely chopped crystallised ginger to this recipe which was my original plan. However I didn’t need a lot so I opted for Green & Blacks Dark Chocolate (60% cocoa) with ginger. It’s awesome all by itself even before I started melting and shaping it. This should take you no more than 30 minutes to prepare and that includes cooling time: I simply chucked it in the freezer which speeds up the hardening effect. Sun dried Tomato Feta Parcels

I could sit and munch on these little parcels all day. In fact when I go out to a Turkish Restaurant in London, I almost always order the feta cheese parcels from the menu. Their ingredients vary only slightly between restaurants with some preferring to keep it simple: frying the filo pastry filled parcels to a crispy golden hue before serving hot. Last night I had some filed with a blend of parsley and feta cheese. They’re perfectly fine filled with the cheese alone, I love the creamy warm texture of the salty cheese. I think I might try adding some mint the next time make them. But you can experiment with all kinds of combinations here: spinach with pine nuts, mixed herbs and garlic or as pictured here sun dried tomatoes, herbs and capers. I think if I made this recipe again, I would tone down the tomato/ caper paste as it competes too much with the saltiness of the cheese and capers. Delicious Peanut Flax Granola

Rome was not built in a day, neither was Granola, or so it seemed. The secret to good granola is to cook it slow and low! I learn from my mistakes very quickly! The first time I made this, I put the oven on so high, the granola cooked to a crisp; rather than throw all my hard work away, I grimaced and ate the bitter cereal the rest of the week. Never again. Top tip: after 20 minutes in the oven, take it out and turn the mixture, making sure to push the granola from the edges inward toward the middle. Then place it back in the oven for another 10 minutes. Remove and stir it one final time before returning it to the oven for the last 10 minutes: a total of 40 minutes! Long wait but the reward is so great; your breakfasts (or even snacks) will leave you feeling so satisfied. You can thank me later…enjoy!

Halloumi Cheese Spring Rolls

What else to do with Halloumi? Because it lacks the melty softness of regular cheese, I have found it difficult to work with it other than to cut it into kebab squares or slice it into mushroom burgers. “It doesn’t naturally lend itself to much else“, I thought and so the block of hard full fat cheese would literally sit in my fridge for weeks. Forgotten. Then for some reason my mind drifted to a lady I stayed with in Alabama last year who taught me how to make egg rolls what we call spring rolls over here. Could I make Halloumi  Spring rolls? It was worth giving it a try. The verdict: Absolutely! A resounding yes! It works very well. The saltiness, the crunchiness, the juiciness of these rolls is amazing. Because they are much bigger than your average spring roll, they hold a lot more flavour. And baking them means not only that you cut down on the calories in a huge way, you also cut down on the cooking time which means more time to …

Salt fish Fritters

Salt fish Fritters are a stable of most Caribbean households. Some eat it for breakfast, as a snack with bread or on its own. Unlike fish cakes which are made of a mixture of potato and cooked fish, saltfish fritters are made with flour and pack in a lot more flavour which makes them very filling. The end product should be crispy on the outside and soft on the inside. These fritters have the most flavour out of any fritter I have tasted recently and the key to this is a couple of things: grate all your ingredients where stated, that way all the flavour will be well-distributed into every bite. Secondly taste as you go along, yes taste the dough, that is the only way to achieve the flavour you want, because once you start frying there is no turning back. You can also adjust the measurements and flavours as you see fit, provided the texture of the dough is not too stiff or runny (do a sample fry first), this should take no more …
