Virgin Passion Strawberry Daiquiri

Another wonderfully hot day in London. I woke up with a bright clear blue sky before me. As the days are getting longer, the sense of urgency and frantic busy-ness which comes with city life is slowly being replaced with a casual, ‘we-still-got-time-ness’. Summer is finally here and with it comes my favourite part of the day: warm summers’ nights.  I love it with a passion: I enjoy being outside with friends and family watching the sun take the slow roll down the western sky, leaving a warm breeze in its path. It’s a reflective time of the day. Yes warm summers’ nights: it almost feels like the day will never end which is why this sunset coloured drink is a perfect accompaniment. The fresh tangy taste of the passion fruit will revive anyone trying to hang on to the last few hours of the night to finish some good conversation or activity. Cherry Coconut Lime Ice Cream

  A few weeks ago I was catching up with a couple of friends, when quite naturally the conversation turned to food and some of the interesting food combinations we have had on our travels and experiments with chocolate in our baking. In that moment, Catherine interrupted my train of thought as she more or less re-enacted the first time she tried Cherry and Coconut Ice Cream in Barbados. “It has to have the little bits of coconut in it” she explained, leaving the rest of us salivating at the thought. I immediately began to picture the combination, but the thought of grating a whole coconut on a lazy Sunday morning, just wasn’t my idea of fun. The conversation moved on, but the challenge never left me. I knew I wanted to make an egg-less ice cream, one that also didn’t require an ice cream machine nor took all day to set. My Gourd Is Good!

I grew up eating only one variety of pumpkin: it had a hard green tortoise shell exterior with bright orange flesh. We moved just outside of London soon after I was born, but at least twice a week, we would be on the road to either Ridley or Brixton Market to buy our produce which they didn’t sell in our part of town. The markets were always a busy place, consumed with the strong smell of decaying raw fish, the booming reggae beats from the old record shop which thumped through my chest and the ever-present icon of the Rasta-man who sold sweet smoking incense from his stall at the entrance of the market. I loved going to market, because it was the one time I got to eat fresh beef patties from the bakery as we followed my parents around the stalls to buy our provision.
